Ingredients:

1/2 cup soft margarine

1/2 cup vegetable oil

1 3/4 cup sugar

2 whole eggs

1 tsp. vanilla extract

*1/2 cup sour milk

2 1/2 cups flour (sifted)

4 tbsp. cocoa

1/2 tsp. salt

1/2 tsp. Baking Powder

1 tsp. Baking Soda

1/2 tsp. cinnamon

1/2 tsp. cloves

2 cups finely diced zucchini (do not shred)

1/2 cup chocolate chips

 

Directions:

Cream, margarine, oil & sugar.

Add eggs, vanilla & sour milk - beat (electric mixer)

Mix together all dry ingredients & add to creamed mixture - beat well.

Stir in diced zucchini.

Spoon batter into greased & floured 9" x 12" pan.

Sprinkle top with chocolate chips.

Bake at 325 degrees Fahrenheit for 50-55 minutes until done.

Needs no frosting.

 

Tip:

To firmly dice zucchini, slice it crosswise in 1/4" slices, take each slice, chop in half & remove & discard entire half moon of pulp & seeds. The remaining half circle of firm flesh, 1/4" thick, can easily diced in 1/4" chunks. If skin is tender, it will not need to be peeled.

 

* To make sour milk, add 1 tsp. lemon juice to 1/2 cup milk - let stand 5 minutes before using.
